Once spring hits, our family of six is in full-on sports mode and weeknight dinners get mighty tricky! I am always trying to think of ways to prep meals before I pickup the kids from school and head to sports practices or games. Add in a few picky easters, and quick, easy, kid-approved meals get really tricky. So, over the next few weeks, I’ll be sharing some of my favorite weeknight meal recipes that are a crowd pleaser, can be made ahead of time, and are relatively healthy (even if the kids don’t know it!). Today’s recipe is for Greek Chicken Gyros, or as my kids like to call them, Greek Tacos. Yum!

Greek Chicken Gyros
- Kraft Sun Dried Tomato Salad Dressing
- 2 large chicken breasts marinated for 3 hours in salad dressing
- 6 Greek Style Pitas
- Tzatziki Dip (I prefer this homemade recipe when I have time but love the Wal-Mart Marketside version for quick weeknight meals)
- Feta Cheese
- Toppings of your choice sliced thin (cucumber, red onion, banana peppers, tomatoes, kalamata olives, lemon, parsley, dill etc.)
Directions:
1) Place chicken breasts in a ziploc bag and cover with salad dressing. Seal the bag and let the chicken marinate in the fridge for 3 or more hours (I usually marinade overnight and use frozen chicken that thaws and marinades at the same time).
2) Before you want to eat (I do this prior to leaving for after-school sports so it’s ready to go when we get home) thinly slice the toppings of your choice and cube the feta cheese. Arrange all of your toppings on a plate with your tzatziki sauce in the middle.
3) Preheat your oven to 425 degrees (you could also choose to grill the chicken). Remove chicken from marinade and cook in a baking dish for 20-30 minutes or until an instant read thermometer shows 165 degrees F.
4) Remove chicken from oven or grill, let cool for a few minutes, and slice into thin pieces.
*Note: I like to do all of this ahead of time and put the chicken on the plate with the toppings so it’s all ready to go when we get home from sports, but you could easily cook the chicken once home, as well.
5) Remove the pita bread from packaging and warm stack of pitas in the microwave for 60 seconds.
6) Serve the pitas warm with the plate of sliced chicken and toppings and enjoy!
